Blanca Blue:

The flagship restaurant of the Garza Blanca luxury resort offers an ultra-romantic setting by the ocean, with views across magnificent Banderas Bay to Los Arcos National Park. Chef Thierry Blouet, one of the founders of the annual Gourmet Festival, creates menus that both pay homage to classic French technique while incorporating Latin flavors and ideas. The results are whimsical yet utterly captivating: confit duck chilaquiles, a souffle of Chilean sea bass with a reposado tequila sauce, a scallop carpaccio with chiles and sea asparagus.

Set on a rooftop with panoramic views over the historic cobblestone streets of Puerto Vallarta and beyond to Banderas Bay, the atmosphere is both elegant (think crystal chandeliers, white tablecloths and hand-etched wine glasses) and casual (balmy sea breezes help the al fresco mood.) The menu features classic European dishes like gazpacho alongside Mexican specialties like shrimp served al pastor (cooked with chilies and served with pineapple).
