Pavo Relleno Negro is a Yucatecan dish comprised of turkey (pavo) in a dark, sauce (the relleno negro part) that almost resembles motor oil. The turkey pieces are cooked with turkey broth and a rich, dark spiced paste called recado -- typically achiote seeds, charred chilies, cloves, allspice, peppercorns and cumin. The dish is garnished with hard-boiled eggs and eaten with fresh tortillas.
