Chiles en NogadaIt's Chile en Nogada season in Mexico! This colorful dish is one of Mexico's most delicious foods. Since it was first prepared around the time of Mexican independence and it contains the colors of the Mexican flag, this is considered a very patriotic dish. Chiles en Nogada are enjoyed in August and September, when the pomegranate seeds that are used to garnish them are available. Conveniently, this falls right around the time of year that Mexican Independence Day is celebrated. Read more about the origins and history of chiles en nogada.
