Forget the gravy. The correct topping for turkey is mole (pronounced "mo-lay"). But if you're not ready to change your traditional Thanksgiving dinner, you can give it a try with your leftover turkey. There are many different types of mole, and many variations on recipes. I take it that’s not a chocolate mole ( the only kind I’ve ever heard of before
Oops guess it does have cocoa powder in it. Interesting. Leave out the lard and chicken broth and a vegan type peanut, cocoa chili powder mole sauce does sound appealing.

There are many kinds of mole. Some have chocolate and some don’t. You can definitely adjust the ingredients to make it vegetarian or vegan – and eat it with vegetables or as enchiladas – my personal favorite.
